  • It is Farmers Market Season for me. That means 4 new flavors and 4 new stories every week. I am at the Larimer County Farmer Market in Fort Collins on Saturdays and The South Pearl Street Farmers Market in Denver on Sundays. I have just finished writing the truffle flavors for the markets until the end of the season.

  • The harvest is new each week. I love to use the local growers fruits and vegetables especially when they are this beautiful. I like to ripen fresh fruit to its optimal flavor before I process it for future truffles. I like to use as much local ingredients as I can including local, beers, wines, spirits, dairy, honey and much more.

  • I am always learning and trying new things. These are fresh pandan leaves which are the leaves of the tropical pandan plant. They have flavors of vanilla, almond and coconut. They are very aromatic (as I write this my whole house smells wonderful from them) and their flavor is unique. I am making a pandan clotted cream and a pandan liquor with them for future truffles.

We work hard to keep our truffles fun, flavorful and honest.

We slowly reduce flavors from real HONEST ingredients, sometimes up to 36 hours or more. This way, a strawberry cream truffle tastes like fresh strawberries and real rich cream. We make our own butter, cream cheese, ricotta cheese, crumb coatings and truffle garnishes – all from scratch. We do this to achieve the richest flavors and the best quality. And each truffle comes with a story, because food with a story is more FUN and creates an experience greater than just eating a piece of chocolate.
