  • Lychee and Sake Truffle (dairy free): Fresh Lychee, Rambutan amd Longan Fruit are slowly reduced to increase their flavor then added to sake and reduced further. The flavors are floral, tropical sweet with tastness and umamai from the sake. To finsh the filling avocado is added for richness and two dark and one vegan white chocolate.

  • Pink Chai Truffle: Pink Chai tea from Happy Lucky Tea House (the pink comes from the addition of beets for their earthy flavor and nutrtional value) is cold brewed with cream and whole milk. Then that cold brew is further enhanced by a slow clotting in the oven. The result is a malty Assam tea with rich spices and a touch of extra ginger for a little spicy bite. Chocolates from Belize, Columbia and Singapore are added to the cold brew with a touch of lilac liqueur to add "a little something" to this very vibrant treat.

  • Bourbon andBanana Caramel Truffle: Fresh red, baby, Thai and standard bananas are overrippened and frozen. These bananas are thawed and blended with Howler Head Banana Whiskey, NOCO Distillery bourbon, cream, whole milk, sorghum and butter then slowy cooked into a caramel. The result is a very banana carmel with smoky bourbon richness. Two milk chocolates and a Columbia dark chocolate, high in cacao (85%), are blended with this carmel for the filling. A dried baby banana finishes the banana flavor and look of the truffle.

  • Key Lime Coconut Truffle: Fresh key lime juice is slowly reduced to intensify its flavor. Coconut milk and coconut cream and mixed with coconut rum liqueur and slowly reduced. These two deep flavored reductions are mixed with Swiss made white and dark chocolate, a touch more coconut rum liqueur and lime cordial for the final filling.

We work hard to keep our truffles fun, flavorful and honest.

We slowly reduce flavors from real ingredients, sometimes up to 36 hours or more. This way, a strawberry cream truffle tastes like fresh strawberries and real rich cream. We make our own butter, cream cheese, ricotta cheese, crumb coatings and truffle garnishes – all from scratch. We do this to achieve the richest flavors and the best quality.
