I’ve spent much of my culinary career in food research and development for large corporations. Now, in my truffle-making, I use the R&D techniques, culinary knowledge and flavor acuity that I developed during my many years of food-tasting. While Audacious Truffles as a public endeavor is relatively new, I’ve been conducting truffle R&D for decades and have made thousands of truffles. The years I’ve spent developing, testing, disrupting and perfecting chocolate truffles are now exemplified in these unique and luscious confections.
